The following classes our offered throughout the year at dependent mostly on crop availability.  With the exception that wine classes are taught year round with frozen berries in the off season to make sure a finished product is available to be consumed at the end of the class.  Classes are FREE!!!! DRYING FRUIT:  We will offer a class once a year or more depending on demand, which will help people with techniques for drying fruits.  The class will start with constructing a cheap dryer for all fruits and knowledge of where you could locate the parts for your very own fruit dryer at the cheapest construct possible.  We will also show you the difference between an electric or solar dryer and natural allowing the outdoors to dry your fruit.  This class will be an exciting way to see how easy it is to preserve your apples, plums, and all other harvested fruits for future consumption and freeing from the burden of having to store them in a refrigerator.  You will be amazed at the sweetness that is locked into the fruit when you allow it to dry. MAKING JAM:  We will lead you out into the Eugene and Springfield area in search of local blackberries.  This will be done on bikes along the bike path and will take up approximately 2 hours and 3 miles of riding.  Then in about 1-2 hours we will make the jam and if the day allows we can take the short float of the Willamette River that is in the backyard of where Public Harvest is located. WINE CLASS:  My favorite class is the production of the wine.  We enjoy making it from blackberries, plums, elderberries, and other locally harvested crops.  The wine process takes 5-6 months before it is bottled and about 8-9 months before it is optimal to be consumed.  The steps will be covered all in one day as we have all stages of the cycle going at one time so the process can be taught in a summer afternoon from a fresh harvest or in winter from frozen berries.  This class will be offered regularly, so check our calendar, as we will provide 3-4 weeks notice.
